The organic vineyard of Winery Nikolaou is located in Douramani, occupying a total area of 0,11 Km2. Its farming is in strict accordance with the requirements set by organic farming, aiming to preserve the unique microclimate of the winery and also the ecosystem of the wider region. Farming is done through the use of moderate mechanical means with only copper, sulfur and natural fertilizers added to the soil. Vine yields range from 500 to 650 Kg per each 0,001 Km2
Harvest
Harvesting is done solely by hand; it begins in mid-September and lasts until October. The exact date is determined by the degree of maturation of grape marcs, with a maximum limit of 12.5 degrees Baumé. To make aged wine, Nikolaou Winery uses grape marcs from grapevines aged at least 40 years, after a process of green harvesting during the summer and selective gathering during the final stage of the harvest.
